The handwork gives the right porosity and roughness that holds the sauce and seasoning, while the slow drying at a low temperature, which can reach up to 30 hours, helps the quality of the pasta in terms of flavor and cooking.
Thanks to this method, combined with the use of first choice grains, artisanal pasta keeps intact the nutritional and organoleptic properties of the grain.
The Pastificio Palma L’Artigiano della Pasta uses high quality 100% Italian hard grains deriving from cultivation and the processing takes place according to ancient Cilento tradition.
